
In one of Siargao’s quieter corners, Alma stands as more than just a place to eat—it’s the story of how a 15-day holiday turned into a lifetime commitment. Founded by Spanish restaurateur Chef Luis Martinez, Alma brings authentic Mediterranean flavors to the island, crafted with local ingredients and a passion for fresh, honest cooking.
Alma’s philosophy is simple but powerful: everything fresh, everything local. Luis personally works with Siargao’s fishermen and markets to source ingredients, ensuring that seafood goes from boat to kitchen within hours. “The first thing we do every morning is check the fish,” he said. “When seafood arrives, it’s as fresh as it gets.”

About 70% of Alma’s menu is seafood-focused, with Spanish classics like paella made from rice imported directly from Spain sitting alongside inventive dishes using local produce. There are vegan options too, reflecting Chef Luis’s thoughtful approach to welcoming a wide range of diners.
The restaurant’s design, painted in white and light hues, feels like a slice of Valencia or Ibiza, relaxed yet elegant. With a cozy seating capacity of 65, expandable to 95, Alma offers a dining experience that feels both special and familiar—whether it’s a romantic date, a family gathering, or a casual meal with friends.

The journey hasn’t been without its setbacks. Alma was supposed to open earlier, but pandemic lockdowns and the devastation brought by Typhoon Odette forced Luis to delay his plans. Despite the challenges, he remained firm in his vision.
Signature dishes like the smoked duck breast, tomato tartar, pork knuckle, and a decadent Manchego cheesecake showcase the kitchen’s playful balance between tradition and innovation. Each plate tells a story—of Spanish roots, Filipino warmth, and a deep respect for the island’s bounty.

Beyond the food, Alma has woven itself into the Siargao community. Many local resorts and businesses recommend it to visitors. Chef Luis takes special pride in his mostly Filipino team, whom he fondly calls his “family.”
Splitting his time between Manila and Siargao, Luis is busy managing other restaurants while also preparing for his upcoming wedding to a Filipina pilot. Still, his heart belongs to Siargao.

From Mediterranean cooking techniques to island-grown ingredients, Alma is a restaurant, as well as a celebration of passion, perseverance, and cultural connection. It’s a reminder that sometimes, the best journeys are the ones you didn’t plan.
