In an exclusive one-night only event, the master chefs behind Sofitel Manila and Metronome – chef Bettina Arguelles and chef Miko Calo – collaborate for a magnifique four-hands dinner on November 24, 2021 at Le Bar.

Both trained in the French culinary arts and savoir faire, chef Bettina and chef Miko present an eight-course degustation menu showcasing local ingredients and the distinct blend of French technique and Filipino flavors. The exquisite dinner is paired with the finest selections from Veuve Clicquot, Château d’Esclans, Cloudy Bay, Cape Mentelle, and Hennessy. 

Interweaving their own personalities and experiences from working in kitchens across Paris, London, New York, and Singapore, this power pairing is set to take discerning epicures on a nonpareil gastronomic experience that brings pride to the Filipino mark in the international culinary scene.

Chef Bettina Arguelles

Sofitel Manila executive chef Bettina Arguelles, the first-ever Filipina executive chef in a 5-star international hotel brand, started her culinary career by working at the iconic Fullerton Hotel in Singapore, Privé restaurant under Michelin-starred chef Wayne Nish, and db Bistro Moderne by world-renowned chef Daniel Boulud in New York and Marina Bay Sands. She was part of the team that opened Sofitel Manila’s newly renovated Spiral in 2013 as French sous chef and was later promoted to restaurant operations chef. In 2016, she moved back to Singapore and worked at Sofitel Singapore Sentosa Resort & Spa and InterContinental Singapore Robertson Quay. In 2019, chef Bettina was recognized by the internationally acclaimed World Gourmet Awards as Chef of the Year.

Modern French restaurant Metronome, helmed by former L’Atelier de Joël Robuchon junior sous chef Miko Calo, is one of the metro’s most sought-after and critically acclaimed dining destinations. Graduating from École Grégoire-Ferrandi, chef Miko was trained in Michelin-starred restaurant La Table de Joël Robuchon in Paris and L’Atelier de Joël Robuchon in London before she cooked her way up to becoming junior sous chef at L’Atelier Joël Robuchon in Singapore. In 2018, chef Miko made her homecoming in Manila by taking French bistronomy to the spotlight with modern French restaurant Metronome which was hailed by Tatler Dining as Best New Restaurant in 2020.
