Broccoli-Crust Pizza.

Special labor-intensive dishes such as kare-kare, crispy patalumpia and leche flan are nice on occassions. But all the cooking, wrapping, and dishwashing over the holidays can be tiring. Serve something new and bake it off!

Wok Vegetable Lasagna with Cream Cheese.

Wok Vegetable Lasagna with Cream Cheese

8 sheets of lasagna noodles 1 leek 200 g shiitake 200 g broccoli 2 carrots 1 zucchini 4 sun-dried tomatoes 300 g fresh spinach 400 ml cream cheese Grated cheese Olive oil

Boil the lasagna sheets according to package instructions. Leave to cool. 

Oil the wok. Saute the leeks, shiitake, broccoli, carrots and zucchini. Add the sun-dried tomatoes, saute and set aside. Saute the spinach in the wok. Cover with cream cheese. 

Make the lasagna, by layering the pasta with sauteed vegetables. Cover with light cream cheese. Sprinkle with grated cheese. Place in the oven and bake for 30 minutes at 180°C. Serve hot.

Broccoli-Crust Pizza

1 head of broccoli
2 eggs
1g salt
½g pepper
50g pizza sauce
60g mozzarella, grated  
30g parmesan, grated
130g regular cheese

Preheat oven to 180ºC.

Chop the broccoli in the food processor. Place chopped broccoli in a large bowl. Cover with plastic wrap and microwave for 1 minute until steamed. Cool. Pour broccoli on a clean cloth and squeeze the liquid out until it becomes a dry ball of broccoli.

In a large bowl, combine the broccoli, eggs, cheeses and seasoning with a spoon until fully combined. Pour mixture into a prelined baking sheet and shape it into a ½-inch-thick pizza crust. Bake for 10 -12 minutes. 

Top with pizza sauce and cheese. Bake for another 10-12 minutes. Cool for 5 minutes before cutting.

Oatmeal-Raisin Cookies.

Oatmeal-Raisin Cookies

140g flour
100g oats
Baking powder, as needed
5g cinnamon
½g salt
80g raisins
2 eggs
½ grated apple
80g honey
20ml milk
5ml vanilla extract  
40ml coconut oil

Preheat oven to 180ºC.

Mix dry ingredients: flour, oats, baking powder, cinnamon, salt. Stir in oil, honey, egg, vanilla, raisins, apple and milk. Add enough milk to moisten the flour and and oats and make a dough that sticks together

Form balls with the dough. Place the balls of dough on baking sheet line with parchment paper, and press dough down a bit with your fingers. Bake 12-15 minutes until firm to the touch. Cool and serve.
