Chef Myke Tatung is set to release his fourth book, “Simpol: The Cookbook” this November. For now, he is busy cooking and organizing a food drive for the people affected by the recent “Tyhphoon Ulysses.” The cookbook follows “Simpol,” his YouTube channel where he features easy-to-follow recipes.

In a virtual cooking demo, Chef Tatung showed us how to make Cheesy Bibingka with Eden Cheese. No oven? One can use the trusty oven toaster, he said. “Pwede ring sa pan, pancake-style!” The secret, he added, is adding Eden Melt Sarap cheese inside the bibingka to make it moist and yummier, apart from the cheese toppings. You may also substitute wax paper for banana leaves.

Cheesy Bibingka with Eden Cheese

  • 1 c rice flour
  • 2 c all-purpose flour
  • 2 tsps of baking powder
  • 2 c water
  • 2 eggs, beaten
  • 2 c sugar
  • 2 c coconut cream (gata), room temperature
  • 75 g Eden Cheese
  • 2 tsp melted butter
  • 2 salted eggs, sliced

First, pre-heat oven to 350°F (177°C). Line 3 5-inch round baking pans with banana leaves or wax paper. Mix rice flour, all-purpose flour and baking powder in a bowl. In another bowl, combine water, eggs, sugar, coconut cream and butter. Mix well.

Then, slowly pour dry ingredients over wet ingredients. Mix with a rubber spatula until thoroughly combined. Use a sieve to get rid of lumps. Fill prepared pans with the mixture until 75-percent full, add some cheese cubes. Top with strips of Eden Cheese at slices of salted egg. Bake in the oven for 20 to 25 minutes. Prick with a toothpick, it’s done when the toothpick comes out clean.

If it’s something sweet and cold you’re craving for, we’ve got you covered. Chef Rosebud Benitez shared recipes for two cheesy Pinoy desserts—halo-halo with twist and a take of the trending ube-cheese pan de sal. These are traditionally bought from bakeries or on the streets, but since we’re still under lockdown, chef Rosebud shows how to recreate them at home.
